How it works

も (also) replaces the usual object particle to mean “vegetables too” — it slips in the idea of “in addition to other things”. ちゃんと (properly) is an adverb describing how to eat. The ending 〜なさい (do…!) is a firm but caring command, the kind a parent gives a child.
