How it works
は (topic) raises the topic (柿 (persimmon)) — “as for persimmons…”. Then の (of) links 秋 (autumn) to 果物 (fruit), so 秋の果物 (autumn fruit) means “autumn’s fruit.” There’s no spoken です (is) at the end — a plain noun statement can simply stop on the noun.
